Poor Soldiers Cake
1 cup of sugar
1 cup of water
125 grams of butter
225 grams of raisins or sultanas
1 tsp of carb soda
1 tsp of mixed spice
Put all ingredients in saucepan and let come to boil.
Allow to cool, and add just sufficient plain flour to make a thin batter
(about a cup and a half of plain flour).
Bake in a moderate oven for approx. one hour.

Best ever scones
4 cups SR Flour
300ml cream
2 teaspoons baking powder
2 eggs
Pinch of salt
1 teaspoon sugar
300 ml milk
Method:
Sift together flour, baking powder and salt. Beat together milk, cream, eggs and sugar and pour into flour. Mix with fork till all combined. Turn out onto floured board and knead well. Press to required thickness and cut with scone cutter. Place on floured baking tray just touching each other. Brush with egg and milk mix and bake in hot oven for 10-12 minutes.
Makes about 24 scones per batch.

NO BAKE Festive Slice
1 pkt Marie Biscuits, crushed
2 cups Mixed Fruit
½ cup Unsalted Peanuts, chopped
½ cup Dates, chopped
¼ cup Coconut (if desired)
½ teaspoon Cinnamon
½ teaspoon Nutmeg
125 grams Copha
3 tablespoons Honey
3 tablespoons Sherry (or Port)
Melt copha in large saucepan.
Add all the other ingredients & mix really well.
Line an approx.. 33cm x 23cm slice tray with baking paper.
Press mixture into tray using back of a serving spoon.
Place in fridge to set & store in container in the fridge.

Microwave Chocolate Pudding Cake
Ingredients:
1 pkt Chocolate Cake Mix
1/3 cup Vegetable Oil
100 gm pkt Instant Chocolate Pudding Mix (Cottees)
1 cup Lemonade
2 eggs
1 pkt Tim Tams
Method:
Beat eggs and add oil, add to the combined cake mix
and instant pudding and stir well.
Mix in lemonade.
Pour mixture into microwave safe baking pan
and push Tim Tams evenly around so each slice
will contain one.
Microwave for approx 6 to 8 minutes on high
Variation: Use vanilla cake mix and vanilla pudding.
Alternatives to Tim Tams: mini chocolate bars eg
Cherry Ripes, Flakes, Mars Bars etc
